Globalization has changed the trend of food consumption in India drastically. Fast foods and processed have attracted youngsters to extent that ingredients like cheese, mayonnaise, tomato puree many others gained extreme popularity. The purpose this study was understand various types cheese their alternatives available Business (B2B) market with a focus on accepted by vendors specific properties are desirable for certain preparations. unveils concept analogue which is new segment used as an alternative dairy cheese. carried out collecting primary data from 130 5 producers. research follows descriptive design, utilizing non-probability sampling method, specifically purposive sampling. results will offer important understandings substitutes, patterns, buying behavior problems faced producers area.
